Deliverable 3.4

Fermentation Experts A/S turned their attention to improving human health in Deliverable 3.4 by establishing a food grade process for producing algae-based health promoting food products. In addition to processing strategies for rapeseed and seaweed, the Fermentation Experts team investigated the potential of fermented food products to reduce the inflammation response in human cells. Based on the results of their trials, they concluded that lacto-fermentation of rapeseed-seaweed has the potential to be used as a food supplement to support reduced levels of inflammation in human cells, although clinical trials will be a critical next step.
